SO, BALFOURS HISTORY STARTED IN 1853 WITH JAMES & MARGARET CALDER (nee BALFOUR). James trained his nephew John Balfour. LATER, 1877, JAMES MADE JOHN A PARTNER, "CALDER AND BALFOUR". ABOUT MARCH 1894 ELIZABETH OPENED 74/72 RUNDLE MALL, BALFOURS TEA ROOMS, SHE RESIGNED A LEASE, THAT BEGAN MARCH 25TH 1897. About 1908 the BALFOURS PIE WAS INTRODUCED. 1920s THE CREAMY GREEN FROG CAKE, NOW HERITAGE LISTED. 2004 THEIR BRAND NEW BAKED TRADITIONAL FRESH BREAD IN SUPERMARKETS

Balfour is listed in the 1895 South Australian Directories. Taking into consideration time of print and that the books are sometimes 2 or 3 years inaccurate, the Balfour Café may have open before 1894. Other researchers feel March 25th 1894 may have been the date based on the second signed lease on August 31st 1896, to begin March 25th 1897 for 20 years. There is a thought she signed the first lease for 3 years. The tea rooms were so successful hence the longer lease.
